Raw Chocolate

Raw Chocolate

  • 220 g raw cacao butter
  • 40 g raw cacao powder
  • 65 g Pure Maple Syrup
  • 1 tsp vanilla extract
  • 1 pinch Pink Himalayan Salt
  • 2 tsp Rice malt syrup
  • Dried Fruits, Coconut, Nuts, Nut butters etc, For using as flavorings or in moulds etc
Raw Chocolate method

Chop Cacao into small pieces and Blitz Cacao for 7secs on speed 7
Melt at 37 degrees for 10 minutes speed 2.
Stir , and scrape sides and blades and then do another minute on speed 2 at 37degrees
Add Cacao powder, Organic Maple Syrup, vanilla extract salt and mix on speed 2 for 1 minute at 37degrees
Then stir and scrape sides
Add Rice Malt Syrup and for around 7-8 minutes speed 2 on 37degrees
Whilst all that is happening sprinkle nuts , nuts and raisins into silicone moulds or lined tray
Pour chocolate over nuts/ nuts and raisins and pop into fridge for at least an hour

You can use from a pinch of salt to a teaspoon depending on how you like it.

Add fruits, nuts , coconut or whichever raw flavorings you like wish either sprinkled through or inside moulds

      There was a few raw chocolate recipes around but they involved the use of Rapadura. I found it too grainy !
      And then I discovered I was allergic to it anyway !
      I notice that a lot of people have changed their recipes from rapadura to liquid sweeteners now too…..
