Chocolate Brownies – Gluten Free Dairy Free Sugar Free Egg Free

I’ll preface this post by saying the Sugar Free means Processed Sugar. Maple Syrup & Dates are still ” sugar”

1 Large Sweet Potatoe ( approx 650-700g)
100g Coconut Flour ( see note below )
12 Medjool Dates around 200g ( pits removed)
40g Cacao Powder
60g Maple Syrup
1tspn Baking Powder
1 Pinch of Salt
10g Vanilla Extract
70-90g water

Steam your Sweet Potatoe in the Varoma trays by placing 800-900 g of water in the bowl and then approximately chop 2cm squares of Sweet Potatoe on Varoma Temp for approximately 20 minutes speed 1.

Meanwhile place the dates and plus on speed 6 for around 30 seconds until its a paste consistency Add in the still warm Sweet Potatoe and mix for around 30 secs speed 6.

Add in the rest of the ingredients  and mix on speed 6 for around a minute or until completely mixed and smooth throughout.

Tip – use your spatula through the top of the Thermomix lid to help move the mix around.

Cook in a 180 degree preheated oven for approximately 20 minutes until skewer comes out clean. Leave in the tray for around 15minutes to cool and then remove and cool completely

You can eat these completely topping free or mix up the following as a topping

1 Avocado
40g Cacao Powder
1.5 tblspns Maple Syrup
1 tsp Vanilla Extract

Add all together and mix until smooth.

You can Make your own Coconut Flour in the Thermomix or purchase a good Organic One. I use Honest To Goodness Organic Coconut Flour.

If I am going to make coconut milk for something else I will tend to whip up a batch of Coconut Flour as well. I don’t have a dehydrator so I have to do it in the oven and its time consuming and I don’t like doing it in warmer weather 😉

If making your own it can have a little more moisture in so use 120g of coconut flour. If using packaged Coconut Flour use 100g.
