Buttermilk Muffins with Blueberry and Chocolate

390g  Plain flour
2 teaspoons Thermomix baking powder (EDC book)
1/2 teaspoon baking soda
120g butter cubed
75g brown sugar
120g blueberries
90g chocolate chips
150g buttermilk
2 eggs, lightly beaten

Place butter and sugar into bowl and beat for 15 secs and then scrape bowl down.

Add the Flour and mix for 15 secs at speed 5. Scrape down bowl then add other dry ingredients

Add the milk and eggs on  speed 4 for around 20 secs and scrape down

Then add the blueberries and mix with spatula by hand so you don’t damage the blue berries and then add then choc chips , you can use slow speed to speed 1 on reverse but really its easiest just to mix by hand

Fill Lined Muffin trays with batter and bake in a preheated 180 degrees oven for 30 mins.

Remove from oven and cook in tray for 5 minutes and then place muffins on a baking tray.

I made a Blueberry Grout with my new gourmet equipment which I love ! its so much fun.

You can make a Blueberry coulis to have warm or cooled.

100g Blueberry
20g Sugar
20 g Water
Heat for 5 minutes at 90 degrees on speed 2.
Cool and serve warm or cold.
