Old School – Matchsticks filled with Strawberry and Custard surrounded by a puffed delicious pastry ensemble
I remember my mum making these , I remember them being served at the tuckshop at school , I remember them being served at any sort of fair or gathering.
There are 3 components to this fab old fashioned morning or afternoon tea delight. I’ll pop down the components and the post assembly instructions.
The Jam – there is nothing better than fresh home made jam.
Recipe for Strawberry Jam infused with Blood Orange and Vanilla
The Custard – A thicker style custard for fillings of pastries, cakes ,scrolls, deserts etc

To make the matchsticks you will need 2 sheets of puff pastry . Defrost to still a little firm and then cut each sheet of puff pastry into quarters and then cut each quarter in half
Transfer to a tray lined with baking paper.
Lay a piece of baking paper over the tops and bake in a 200 degree oven for approximately 15-20 minutes or until slightly golden.
Allow to cool and spread two of the puff pastry “matchsticks” with jam and custard .
Finish by dusting with some icing sugar.
