Viva La Meatballs ( Long Live The Meatballs !! )
1 Onion Halved
1 Garlic clove
1 Carrot
1 Zucchini
About 100g Feta Cheese
Dried Herbs Parsley, Thyme and Sage – about a teaspoon of each
1-2 Teaspoons of Tumeric – ( optional – see note below )
Vegetable Stock Paste about 20g
1kilo Chicken Mince ( Or mince your own )
1 Egg
250g Breadcrumbs Make your own (or if using Panko just use 100-150g )
Using the Ultrablade Blitz Onion and Garlic 12 for 10
Change over to the attachment for the Grater and choose Attachment A Place Grater & Shredder Lid in place and grate the Carrot and Zucchini Speed 10 until all grated.
Empty out and add a kilo of chicken chopped and blitzed using the ultra blade speed 12 for 10 secs or until minced through
OR just add in bought chicken mince.
Add in the rest of the ingredients and either mix on Speed 6 until mixed through using the Mixer attachment. OR remove any attachments and mix through with hands I find its easier to mix through with gloved hands
Form small balls and bake in a 180 fan forced degree preheated oven for around 35 minutes . Turn over with tongs half way through cooking.
I use these Meatballs for a variety of things. I make up a batch of these for the freezer and they are great to use for school lunches.
This forms the base for a variety of meals as well.
I use this base and add in a handful of Sundried Tomatoes & Fresh Basil Leaves instead of the dried sage and thyme and to the mix and then fry them off instead of the oven and add a bottle of Passata and cook through and have Tuscan Meatballs with Long pasta done in the Cuisine Companion – Link here
I also sometimes do half and half or any quantity to a kilo of Pork & Chicken Mince

Tumeric Note – ( I use this in all my stew, casserole type recipes now – the benefits of tumeric are amazing – see below) Besides adding some zing to your dishes it has some awesome health benefits with research showing it may help to ward off Alzheimers reducing heart disease / strokes , reduce inflammation, fight colds and flus , prevent/reduce diabetes and help to prevent cancer with its anti-inflammatory properties )
