I love this soup the balance of the earthy butternut pumpkin with the sweet apple , roasted together gives this a unique zing
I like to have something a little different to the normal. Just for that surprise element on the tongue

Ingredients
- 1kg butternut pumpkin Peeled and Diced
- 1- teaspoons All spice
- olive oil
- 2 apples peeled Cored and quartered and Lemon Juice Drizzled over
- 1 onion quartered
- 2 garlic cloves
- 800g water
- 30g Chicken Stock Paste
- Prosciutto
- Feta
Method
Preheat the oven to 190˚C and line a baking tray with baking paper.
Place the pumpkin, all spice and drizzle Oil Cook for 20 minutes ad add apples Cook 30mins
Place Onion and Garlic in Bowl with ultra blade and chop speed 12 for 10 secs
Add 20 g oil to bowl and sauté on Auto Programme Slow Cook at 130degrees for 3 minutes
Add Roasted Pumpkin and Apple
Add water and stock and cook at Speed 4 on 100 degrees for 15 minutes
Blitz by slowing turning dial from Speed 3 and increasing to speed 12 for 30 seconds
In a small pan add a teaspoon of Oil and saute until crispy a few slices of Prosciutto – drain on paper towel
Crumble the cooked prosciutto and some Feta cheese on the top
