Chicken & Pork Rissoles with Mash in the Cuisine Companion

 

Ingredients 

1 small onion cut in half
1 small carrot cut into 4
1 small zucchini cut into 4
500g pork mince
250g chicken mince
250 g Breadcrumbs either Freshly made or Panko Crumbs
1 egg whisked with a fork
Mixed herbs Fresh or Dried – Sage, Parsley, Basil,
1 .5 teaspoons of Tumeric ( I add Tumeric to everything these days ! )

 

 

There are two methods that I do for this depending on my mood ! Both are very nice Try both and let me know which you prefer!

 

Method 1

Place Ultrablade in Bowl and blitz the onion speed 12 for 10 seconds
Change over to the attachment for the Grater and choose Attachment C Place Grater & Shredder Lid in place and grate the Carrot and Zucchini Speed 10 until all grated.
Empty all of this into a large bowl and then add the rest of the ingredients and mix with hands ( I like to use gloves 😉 ) Roll into balls about a tablespoon and a half and mould into a rissole shape.
Cook in a Frypan lightly oiled until cooked
Method 2

Place Ultrablade in Bowl and blitz the onion speed 12 for 10 seconds.
Into a large Frypan with a tablespoon of Oil add the blitzed onion and cook for a few minutes
Change over to the attachment for the Grater and choose Attachment C Place Grater & Shredder Lid in place and grate the Carrot and Zucchini Speed 10 until all grated.
Add carrot and zucchini. Cook, stirring, for 3 more minutes, or until soft. Transfer to a large bowl and set aside to cool .Add the rest of the ingredients and mix with hands ( I like to use gloves 😉 ) Roll into balls about a tablespoon and a half and mould into a rissole shape.
Cook in a Frypan lightly oiled until cooked

 

 

Mashed Potato

40-60g Butter
80g -100g Milk
500-700g Potato ( approximately 4-6 potatoes )
700mls Water
Seasoning – salt and pepper

Put 700mls ( first line in the CC bowl ) – it doesn’t matter if its just over

Chop approx 600g Potatoes into small pieces ( again anywhere between 500 and 700 is fine )
Place them into the Steamer Basket inside the CC
Launch the Steam Program for 30 minutes – make sure potato is cooked If not continue for another 5 minutes or so
Empty Water out and place Potatoes in the CC bowl with the Whisk inserted and mix speed 6 for approximately 30 seconds
Add in the milk and butter and any seasoning and mix speed 8 for 30 seconds . Ensure whipped to perfection if not continue for another 10 seconds or so.
