Ciabatta Loaves Cuisine Companion

500 g bakers flour
Pinch of Salt ( I use pink Salt Flakes )
470 g warm water
7 grams of Dried Yeast ( I use Lowans )

Using the Kneading Attachment add ingredients in order as above  mix on speed 10 for 10 seconds.

Let mixture rest in bowl for 10 minutes.

Mix on Speed 10 for 2  Minutes – The idea is to get bubbles of air in. Keep an eye on your machine during this time it will bounce a little. Reduce to 9 for 15 secs or so and increase up to 10 for another 15 secs . You need to get it to rise in the middle like the photo below. Doesn’t have to be exact but just where you can see there is air in there

Pour into a large well-oiled bowl and let sit in a warm space until risen to the top of the bowl and its light and wobbly

Scrape out the dough with your hand ( I find if you flour or oil your hand it will not stick so much – its very sticky ) onto a mat like the Ikea one in the photo making sure that it is well covered in flour.
{ You will find it will be very light and will wobble }

 Divide this in 4 pieces and shape into balls with well floured hands

Next leave these 4 round shapes to prove again.

Flour your hands and grab each of the round dough balls and shape them into a oval shape by turning the round ball over and back over another time and then again all the time making the oval shape.

Place into a 250 degree preheated oven for 10 mins ( or 240 degrees Fan Forced ) Then reduce to 200 degrees regular or fan forced for approximately 15 minutes until the loaves are golden

Turn out onto a cooling tray.
