I had lost my cooking mo-jo I had been in the kitchen doing some recipe testing and failing miserably ! The family were happy enough but I wasn’t ! And then I made this beauty a few weeks ago . I had posted a shot of it on my facebook page HERE and it definitely seemed to be a winner for those interested in the recioe
I was a little delayed in getting the recipe written up as my dear dad had a nasty fall and ended up in the ICU and then having a pacemaker installed ! So recipe writing was put on hold !
I’ve made another couple of these fantastic loaves/cakes and thought I really must write it up and share as its so delicious and such a healthy alternative to the usual 🙂
200 grams of buckwheat flour
1 teaspoon of baking powder
1/2 teaspoon of bicarbonate of soda
Pinch of salt
1 teaspoon of cinnamon
60 grams of Coconut Oil  ( I use Loving Earth brand )
3 very Ripe Bananas
2 Eggs
50g of Apple Juice ( or if you are not needing dairy free you can use 50g of natural yoghurt ) – I have done both
100g Pure Maple Syrup
100g Blueberries Frozen
Mix the dry ingredients Buckwheat Flour, Baking Powder, Bicarb of soda, salt and cinnamon on speed 5 for 10 seconds and then set aside
Add coconut oil into the Thermomix and heat 60 degrees on speed 1 for 1 and half mins
Add in the 3 bananas
Add in the 2 egg
Add in the 50 g apple juice or 50 g of natural yoghurt
Add in 1 the tsp vanilla extractt – 5 grams
Mix on speed 3 for 10-15 seconds
Then add in the maple syrup and blueberries on reverse at speed 1-2 for 10 secs
Mix through with the spatial and then add in the dry ingredients and mix on reverse at speed 3 for 10 secs
Empty into a well greased tin using some coconut oil
Place in a pre heated 160 degrees (fan forced ) or 170 degree oven
for approximately 1 hr to 1 hr 10 minutes
Check after 50 minutes with a skewer
Cake / Loaf is cooked when golden and the skewer comes out clean.
Leave to cool in pan for approximately 5-10 minutes and then tip out onto a cake rack to completely cool
Enjoy plain, with some of my spreadable butter Eat cold or warm anyway is delicious !
