Risotto with Chicken Mushroom and Verjuice

Risotto is something I never really made before my Thermomix. I mean I could make it and I did make but I couldn’t be bothered making it ! It took so long and it had to be stirred and one false move and boom your Risotto was history !

The Thermomix makes light work of making Risotto thats for sure !

Risotto with Chicken Mushroom and Verjuice

Ingredients

50g Pecorino ( If you don’t have this use Parmesan)
1/2 Onion (peeled)
1 Clove Garlic
300g Chicken
100g Mushrooms
1 Tbsp Fresh Thyme
350g Arborio Rice
40g Olive Oil
150g Verjuice
950g Water
40g Vegetable Stock Paste
40g Cream ( optional)

Method

Blitz the Pecorino ( or Parmesan)  set aside and clean out the bowl
Put the Onion and Garlic and blitz speed 5 for 3 seconds
Add in the Oil and saute for 2 mins on speed 1 at 100 degrees.
Add in the Chicken and Mushrooms
Saute for 3 mins on speed soft REVERSE at 100 degrees.
Add in the rice and mix for 30 secs reverse speed 1
Then add in Verjuice, water, vege stock and Thyme.

Cook for 16 minutes Speed 1 to 2 REVERSE at 100 degrees. Start out at 2 and if it is spluttering too much drop it down.

Add in 40 g Cream ( optional ) and mix through speed 1 for around 30 seconds

Place into your Thermoserver and allow to finish the coking process for a minimum of 5 minutes
