Chocolate & Coconut Muffins

200g Plain Flour
30g Cacao (not cocoa you really need to use cacao to get the rich result PLUS the health benefits of Cacao – I’ve included a photo of the differences between Cacao and Cocoa)
50g Shredded Organic Coconut
2tsp Baking Powder ( made in Thermomix – recipe in the EDC)
1tsp Baking Soda
70g Raw Sugar  or 70g Brown Sugar – you can use Coconut Sugar or Rapadura ( I’m allergic to both)

Mix on Speed 3 for 10 -15 seconds

Add in 140g tub of Greek Style Natural Yoghurt
50g  Olive Oil Or Macadamia Oil (if not using for school) or 60 melted cooled butter.
2 Eggs
1tsp of Vanilla Extract – recipe HERE

Mix on speed 3 for 20-25 seconds

Fill muffin cases to approximately 2/3 rds full and then push in approximately 5 to 7 choice chips and sprinkle shredded coconut over the top.

Bake in a pre-heated 180 degree Oven for approximately 15minutes or until a skewer comes out clean

Makes approximately 14 to 15
