Lemon Butter or Curd whichever takes your fancy – means the same thing but just different ways that people have been raised as to what they call it .. There is some discussion on whether its to do with ingredients but really they are both the same thing… except for Lemon Honey – now that is different because its made with honey instead of sugar !
So I love Lemon butter – its delicious – however lemon butter doesn’t love my hips and thighs so I prefer to have it more as a treat and particularly when lemons are in abundance, as they are at this time of year, and as always I have reduced the sugar as much as possible ..
Thermomix TM5 Lemon Butter Recipe
80g sugar
10g lemon zest – 1 lemon zested
2 eggs
1 yolk
100g butter
100g lemon juice about 3-4 lemons
Mill sugar and zest speed 10 for 10 secs TMX scrape down and repeat for 5
Add butter and chop for 7 speed 5 TMX
With mixer running Add eggs 20 secs speed 3 add eggs through top slowly TMX
With mixer running Add lemon juice speed 5 for 20 secs TMX
cook for 10 minutes at temp 90 speed 4 TMX
Pour into sterilised jars and allow to cool and then pop in fridge
Cuisine Companion Lemon Butter recipe
80g sugar
10g lemon zest – 1 lemon zested
2 eggs

Mill sugar and zest speed 12 for 30 secs CC scrape down and repeat for 5
Add butter and chop for 10 speed 10 CC
With mixer running Add eggs 30 secs speed 5 add eggs through top slowly CC
With mixer running Add lemon juice 20 secs speed 7 CC
cook speed 6 at 90 degrees for 10 minutes CC
Pour into sterilised jars and allow to cool and then pop in fridge
