SFC Air Fried Chicken Not Quite KFC


For a healthier version try this Southern Fried Chicken recipe using your Cuisine Companion Mini bowl and Air Fryer.

Whilst my maiden name is the same my Great Uncle wasn’t Colonel Sanders ! so sadly there was no secret recipe handed down to me ! However the internet is full of different recipes all trying to emulate the great KFC recipe out there !
Personally I haven’t had a piece of KFC for at least 15 years ! It might be tasty but its loaded with bad fats !

So why not still enjoy something along the same lines but that is way healthier for you.

Please note I no longer have the Teal appliances mentioned below. You can use your Thermie to blitz the spices etc Make sure you place a piece of paper towel between lid and MC with old MC’s
Also place steamer in to keep spices from flying around.

Ingredients
7g ground ginger
15g garlic powder
15g sweet paprika
1/2 tablespoon salt
1 tablespoon celery salt
1 tablespoon black pepper
1 tablespoon dried mustard
2 tablespoons white pepper – I used a garlic white pepper mix
1/2 tsp oregano
1/2 tablespoon thyme
1/2 tablespoon basil
Add to the above 11 herbs and spices
40g Panko Bread Crumbs

300g plain flour
250g Buttermilk ( see tip below )
1 whole egg

Method 
Blitz 11 herbs and spices and Panko crumbs in your Tefal Cuisine Companion mini bowl (see notes below on where to purchase) speed 12 for 30 seconds
(Alternatively you can use another processor that will blitz small quantities of herbs and spices)
Add in plain flour and blitz in mini bowl on speed 12 for 30 seconds ( if you don’t have the mini bowl at this stage you can use the larger CC bowl with ultra blade)
Set aside
Mix 250g of buttermilk with 1 whole egg (hint – if you don’t have any buttermilk mix 250g milk with 30g of lemon juice and mix and set aside for 15 minutes)
Dredge chicken pieces ( I used 14 chicken drumsticks and half of the SFC mix ) in the buttermilk/egg mix and then into the herbs/spices/flour mix ensuring that pieces are thoroughly coated.
Lay on trays lined with baking paper and place in fridge for 30 minutes to an hour to help set coating.

Bake in your air fryer at 180 degrees for 30 minutes turning over half way, ensure cooked through if not cook for another 5 minutes
If you don’t have an air fryer you can bake in the oven for approximately 35minutes at 180 degrees fan forced turning half way. The coating won’t be as crispy as air fryer but it still lovely.

Notes for purchasing the Tefal Mini Bowl
I’ve had the Tefal Cuisine Companion Mini bowl for a while, I got it a few weeks before Christmas and have been giving it a good test and its a ripper ! For all the small blitzing that is needed , from milling herbs and spices , to milling nuts and breadcrumbs, making sauces this is such an amazing little bowl to accompany the main bowl.
Whilst its not available in Australia currently you can buy from overseas for a reasonable cost and shipping time !
eBay has a few of the bowls but I bought mine from Amazon France. I used iTOOLS Google Translate

Most definitely worth it if you want to do small quantities of onions, garlic, nuts, breadcrumbs, sauces etc – you will definitely love this as an addition to your big Cuisine Companion.. Ive had it since last year and am loving it for all my smaller items.
