One of my faves, I’ve been making this for years in the Thermomix and now finally written it up for the Cuisine Companion
A fantastic all in one meal that is perfect for summer nights or a quick throw together meal

Ingredients
1 onion peeled and quartered
2 garlic cloves
30g olive oil
4 x fresh ripe tomatoes quartered
30g vegetable stock paste
50g tomato paste
10g tamari sauce (ok to omit if you don’t have)
1/2 red capsicum diced one inch pieces
4 x mushrooms quartered
1/2 a zucchini diced one inch pieces
70g Water
150g – 250g Penne Pasta (or Spiral) ( Dry not cooked)
Method
Place onion and garlic into bowl speed 12 for 10 seconds
Add oil sauté on P1 slow cook at 130 degrees for 4 minutes
Change to mixer
Add everything else except pasta
Cook for 10 minutes at 120 degrees on speed 3
Add Pasta Slow Cook P2 for 15 minutes
TIP:(Personally I prefer to keep ultra blade in until the adding pasta stage..and then change to the mixer but you will need to remove the vege tomato mix and then insert mixing blade )
TIP: Add in some sliced Chorizo, slice on the diagonal and then again through each slice, saute after the onion and garlic step , change over to the mixing blade at this point and add chorizo in and saute on slow cook P1 130 degrees for 2 minutes and then continue recipe

What can I use instead of capsicum, allergic to it and that family?

Zucchini or increase the mushroom , any soft vegetable really would be fine or you can leave it out
