Fathers Day Treat
These delightful steamed chocolate puddings filled with raspberries and cashew cream will be a lovely sweet treat for Dad tomorrow for Fathers Day.
Fresh and Light but full of chocolatey goodness whilst being dairy free ! Whilst these do have a small amount of sugar they are still relatively healthy and certainly healthier than a regular cake. But aside from being more on the healthier version side they are absolutely delicious and so easy to make !
You will need to get to and soak your cashews today ready for Fathers day tomorrow š Ā
I’ve also included a Thermomix Version for both the Cashew Cream and Chocolate and Raspberry Steamed Puddings.Ā

Cashew cream ingredients and method
Ingredients
150g Natural Raw Cashews (Soak overnight, or at least a minimum of 6 hours )
Method
Cuisine Companion
- Drain and rinse Cashews
- Pop them and 150g water into your Cuisine Companion with Kneading Blade andĀ blitz speed 12 for 1 minute, scrape andĀ repeat for another minute.
- Swap to Ultrablade and repeat for another 1 minute, scrape and repeat for another 1 minute
- Add in a splash of Vanilla Extract
- Add in some maple syrup about 10-15g
- blitz for another 20-40secs speed 12
- It will thicken on refrigeration.
Thermomix
- Drain and rinse Cashews
- Pop them and 150g water into your Thermo blitz speed 10 for 1 minute until smooth.
- Add in a splash of Vanilla Extract
- Add in some maple syrup about 10-15g
- Blitz for another 20secs
- It will thicken on refrigeration.
Steamed Chocolate Raspberry puddings with Cashew Cream
Ingredients
160g flour
80 raw sugar
130g cashew cream
1 egg
40g cacao powder ( not cocoa )
2tsp baking powder ( 8g )
75 g macadamia oil ( or other light flavour oil or melted butter )
5g vanilla essence
pinch of salt
16-24 fresh raspberries
800g Water ( for steaming )
Cuisine Companion Method
- Use Kneading blade and blitz sugar at speed 12 for 1 minute
- Add in everything else and mix on speed 6 for 45 seconds until combined
- Add in 800g of water to bowl
- Divide into 8 teacups ( or small silicone cupcake dishes ) and steam for 25 minutes on Auto Steam P1
- At 10 minutes stop CC and poke raspberries into the top gently, then continue with the rest of the programme.
- You will have a little Cashew cream left over , drizzle over the top of the puddings when serving.
Thermomix Method
- Blitz sugar at speed 10 for 10 seconds Scrape down.
- Using butterfly, add in everything else and mix on speed 5 for 20-30 seconds until combined
- Rinse out bowl
- Add in 800g of water to bowl
- Divide mixture into 8 teacups ( or small silicone cupcake dishes ) and place in Varoma tray
- Steam for 20 minutes on varoma speed 2, check and make sure cooked or continue for another 3-5 minutes
- At 10 minutes stop TMX and poke raspberries into the top gently, then continue with the rest of the programme.
- You will have a little Cashew cream left over , drizzle over the top of the puddings when serving.
