Malaysian Creamy Chicken Satay

 

OMG this recipe is so good. It takes me back 7 years to a packet mix, that used to be put out by the brand Continental!
This was of course pre Thermomix and Cuisine Companion days. !
Now I get to make my own, which is just as well because apparently they took this off the shelves some years ago ! Did you every buy this packet mix ?

This was a favourite in our house so I decided to try and replicate it, which is a little trick when there isn’t even a packet around to check the ingredients out on ! But this is pretty close to that amazing taste but without any nasties

Oh and its quite a saucy little dish, Manu would be proud ?

Ingredients

1 onion, halved
1 clove of garlic
30g olive oil
700g chicken breast,  SLICED like stir fry, not too thin though !
15g Tamari
2 teaspoons curry powder – I recommend and use Babas Curry Powder. Just like Manu
75 g peanut butter Make in the CC – use my nut butter recipe,  swap nuts for all peanuts
250g  water
1 red capsicum, sliced

Method

  • Using the ultra blade, chop onion and garlic at speed 12 for 10 seconds
  • Change to Mixer add capsicum slices and oil and slow cook on p1 for 4 minutes.
  • Add chicken and Slow Cook P1 for 4 minutes
  • Add tamari, curry powder, peanut butter , water and combine
  • Slow cook on Auto slow cook P2 for 30 minutes
  • Set aside the Satay, to keep warm in a thermo server.  You can get one from Big W or Kmart or kitchen shops or the buy sell Thermomix pages.
  • Now very important Do not serve with rice ! serve with spaghetti ( if you want to serve with rice you can just teasing but the spaghetti is far yummier and its how I have always had this dish )

Cook my pasta spaghetti as per the recipe on the website – long pasta in the CC 

Serve with the pasta and enjoy..

 

 

Thermomix method

Method

  • Place onion and garlic in bowl.  Chop 3-4 seconds at speed 5
  • Remove lid and scrape down bowl.  Add oil and cook 3 mins, 100deg, speed 2, MC off
  • Scrape bowl and add sliced capsicum.  Cook 3 mins, 100deg, reverse speed 2, MC off
  • Place butterfly into bowl.  Add sliced chicken.  Cook 5 mins, 100deg, reverse soft speed.
    Note:  Stop about half way through and gently use spatula to move chicken about.
  • Add tamari, curry powder, peanut butter and water Place steam basket on top of lid instead of MC.
  • Cook 30mins, 100deg on reverse at  soft speed.
  • Set aside the Satay, to keep warm in a thermo server.
  • Now very important Do not serve with rice ! serve with spaghetti ( if you want to serve with rice you can just teasing but the spaghetti is far yummier and its how I have always had this dish )
  • Cook my pasta spaghetti as per the recipe on the website – long pasta in the TMXServe with the pasta and enjoy..
