So now you have some leftover “pulpy” stuff right ? What on earth are you going to do with that ?
Well I have a few recipes and the vote in the Tefal Cuisine Companion in my Kitchen group was to post my brownie recipe as the free one so here it is !
Its not just ONE recipe though ! its 3 , well 4 if you include the Almond Milk ! I also split my almond pulp and used it for my Almond Pulp Seed Crackers recipe ( you can find that in the Cuisine Companion Club as an exclusive recipe )
Ok so on with the Recipe 3 in one Brownie Recipe ! make it as a Raw Brownie slice , make it as Protein Balls or make it as a traditional Brownie slice !
You will need
Ingredients List A – For the Raw Brownie Slice or Balls
Left Over Almond Pulp ( you can also do this from your other nut milks )
210g Medjool dates – this weight is after the pips are removed
150g raw natural cashews
100g shredded coconut
Pinch of Salt
50g raw cacao powder
30g Pure Maple Syrup
1og Vanilla Extract make your own recipe here
Ingredients List B – If baking the brownie slice you will then use these – do not use if making raw brownies or balls.
2 free range eggs lightly whisked ( you could also sub these for two vegan chia eggs )
110g virgin coconut oil (melted and cooled )
Method
Into the bowl add the raw natural cashews and blitz on speed 12 for 30 seconds.
For the Raw brownies or raw brownie balls add everything else in ingredient list A and mix Speed 9 until combined around a minute
To make the Raw Brownie Balls – take spoonfuls of the mix and roll into balls feel free to roll in cacao powder or coconut !
To make the Raw Brownie Slice – spoon into a lined square pan and spread out and smooth out and place in freezer for around 30 minutes and then store in fridge.
To make the Baked Brownies – add in everything else from ingredient list A and then add in the remaining ingredients from list B .
Then spoon into a lined square pan and spread out and smooth out.
Place in the oven on temp 170 degrees for around 20 minutes.
Remove from oven allow to cool in tray for around 10 minutes and then remove and cut into squares
Store in a airtight container in the fridge
