My yummy and gorgeous new oils arrived today.. so I put my thinking cap on and was inspired to make these little beauties
Similar in sorts to the Shortbread with Orange & Poppy but with a different twist using the nuts. Again if you do not have these high quality Essential oils I do encourage you to give them a go and try them out , which you can organise through me to purchase
I have always used Essential Oils of various brands with homemade cleaning products , atomisers and for scents. I’ve now decided to expand into using them topically and some in my recipes However it is very important to note that there are some oils that are suitable for using in this recipe and some that are not ! Not all oils are equal ! Contact me to find out which oils I use !
Lime & Pecan Shortbread
Ingredients
180g Plain Flour
50g Sugar ( I used Billingtons Golden Caster Sugar – Unrefined )
100g Butter
20g of Milk
7 drops Lime Essential Oil – Available HERE
1 tsp Vanilla Extract ( recipe here )
2 teaspoons Lime Zest ( about one lime )
10 Pecans chopped up finely. ( You can do this first in the Thermomix if you like)
Pinch of Salt
Icing Sugar (for Dusting)
Mix the Flour , Sugar , Lime Zest ,Finely Chopped Pecans and Salt in the bowl on speed 5 for 5 seconds.
In a separate china or glass container weigh in chopped up butter ( just on the top of the Thermomix lid) and add the 7 drops of Essential Oil Lime over the butter.
Add this into the bowl now ( this is really just to help spread the drops through the mix )
Add in the 20g Milk and Vanilla Extract. and knead for 30 seconds.
The mix will look crumbly but empty it onto mat and bring the dough mix together with your hands in a bowl and either pop into the bowl and cover with plastic or just wrap the ball in plastic.
Let the Dough rest in the fridge for approximately 30 minutes.
Bring the dough out and dust your silicone mat & rolling pin with flour and roll out your dough to approximately half a centimetre thickness.
Use whichever shape cutters you have or just cut into triangles or squares , circles or rectangles.
Place a baking tray lined with baking paper in the middle of the oven in a 180 degree fan forced oven ( 200 degrees not fan forced) for approximately 12-15 minutes making sure that they don’t burn.
Remove the tray and allow to sit and then cool on a wire rack
Dust lightly with icing sugar ( optional )
If you do not have Lime essential oil on hand then switch the 2 tablespoons of Milk for 2 tablespoons of Lime Juice and add in 1 extra teaspoon of Lime Zest 🙂
