When whipping up a batch of my Spreadable Butter ( recipe HERE ) I had my left over buttermilk and decided to whip up a batch of Cupcakes today rather than freezing it. I was going to whip up a batch of half and half Chocolate and Vanilla and then put some choc chips through the chocolate and some Blueberries through the Vanilla…Next thing I was making Chocolate on the bottom and Vanilla on the top with a layer of Choc Chips in between ! I love it when you have an “accidental” creative idea
You will need
240g Buttermilk
80g Butter Melted and cooled
1 egg
1 tsp Vanilla Extract
300g Plain Flour
2 teaspoons Baking Powder ( Made in the EDC)
1 tsp Baking Soda
Pinch of Salt
80g Sugar
10-15g Cacao
Mix Buttermilk, Melted Butter, Egg and Vanilla for 7 secs on speed 4
Add in the remaining ingredients except the Cacao
Mix on Speed 4 for around 20 seconds
Split into two bowls
In one bowl add the cacao and mix through or split half and half and leave half in the Thermomix and mix in the Thermomix for around 20 secs speed 4
Layer each cupcake patty with a heaped desertspoon of mix Fill each cupcake patty evenly as you can. Place a few choc chips up to about 7 on the top
Carefully spoon in a heaped desertspoon of vanilla mix
Bake in a 180 degree oven for around 20-25 mins depending on your oven or until a skewer comes out clean.
Cool and then place on cooling wire tray
