Proscuitto wrapped Zucchini Bites

Heat Oven to 190 degrees

170g Cheese (you can use regular cheese like colby or do a mix of colby and parmesan)
1 Med Onion Cut into Quarters
5 Eggs
180 g self raising flour
2 Zucchinis roughly chopped (700g)
20g EVOO – Extra Virgin Olive Oil
1 – 2 tsp of Thyme
1tblsp Chopped Parsley

About 10-12 very thinly sliced Prosciutto

Grate the cheese in bowl, 6seconds Speed 8 set aside
Grate Onion speed 5 for 3 secs then add the Zucchini and grate for 5 secs on speed 5.
Add other ingredients
Mix 15-30 secs on reverse speed soft increasing to speed 4
until all mixed through.
You can Lightly spray your muffin trays or lightly wipe with butter (very lightly)
Place about 3/4 inch wide x 4 inch length strips of Baking paper (not necessary but helps with lifting out)  into the muffin trays.
Then place pieces of Prosciutto about 2 inches long into cross shapes in the bottom , and up the sides of each muffin hole
Pour the Zucchini Mix in to about just over 3/4 full of each hole
Add a sprinkling of cheese across the top of each one if you like
Bake for around 20minutes until cooked through , slightly golden on the top
All dependent on your oven
Makes around 20

These freeze very well
