Creamy Roasted Sweet Potato and Cauliflower Soup
My family thinks this should be called OMG Soup.
My daughter loves Cauliflower soup. I on the other hand do not ! I love Sweet Potato. So this is the result !
A fabulously simple soup with a gourmet twist 🙂
1 Average Cauliflower
1 Large Sweet Potato
1 Onion
2 large garlic cloves
25g Olive Oil
10g Sugar
1000 g of water
30g Vegetable Stock
Nutmeg *optional*
Preheat oven 200degrees and put chopped up Sweet Potato and Cauliflower into baking dishes and add some olive oil. Give them a toss so that they are lightly coated
Roast for around 35 minutes
With about 5 minutes to go peel and chop onion into half, peel the garlic and add onion and garlic into bowl. Chop 3 secs on speed 5. Add 25 g Olive oil and cook for 3 minutes 100degrees speed 1. Add 10g raw sugar and cook another 2 minutes 100 degrees speed 1
By this stage Veges should be done. Tender and slightly browned. Add them into the bowl and then add 1000g water and 30g vege stock
Cook for 20 minutes 100 degrees speed 1. Check that veges are starting to break up if not cook for another 5minutes (20 was fine for me)
Blitz by slowing turning dial from 1 – 9 for 30 secs
Pour into bowls and add a sprinkle of nutmeg if you like

What a delicious soup, and so easy to make. Forgot to put the sugar in, so will see next time how much difference it makes! Finished it off with a swirl of cream…mmmm
