Freezer Roll Cookies

Cookie Dough Biscuits Chocolate Hero

-125g unsalted butter – soften 40 seconds at 50 deg speed 4

– add 150g brown sugar, 1 egg and 1 teaspoon of vanilla – mix 1 minute speed 6

– add 210g plain flour, 40g SR flour, 1 teaspoon bicarb and 30g CACAO POWDER – mix 20 seconds speed 3, scrape down and mix another 20 seconds speed 3

– Add 120-140 grams of mixed choc bits white and dark

– tip whole mixture into a large bowl and squish with your fingers (I used a glove as I don’t like getting messy!)

– divide into 2 x 20cm logs, wrap in cling wrap and freeze for 30 minutes

– cut into 15mm slices and bake at 180 degrees for 15 minutes, rotating trays at half time

*** For plain vanilla based cookies omit cacao and add just milk choc chips or no choc chips
