Chicken with Quinoa and Feta Meatballs with Tomato Sauce and Zoodles – Zucchini Noodles
Ingredients – For the Meatballs
500 g chicken
2 cups cooked Quinoa
120g feta crumbled
1 Egg
1-2 tblspns fresh chopped rosemary
Pinch of Pink Himalayan Salt
Pinch Of Black Pepper
Chop Rosemary on speed 5 for about 3 seconds ( or do by hand) Add egg and whisk on speed 6 for about 3 seconds , add Chicken Quinoa Feta and seasonings and mix speed slow reverse until mixed together
Form into balls. Place on both Varoma Dishes which have been covered with Baking paper – make sure you score the paper in long slits
Clean out bowl.
For the Sauce you can use my Pasta Sauce with Hidden Veg HERE if you are making zoodles you can omit the Zucchini in the Pasta Sauce recipe and replace with 6 mushrooms OR use the zucchini.
For the Zoodles – I used one large Zucchini and my Benrimer
Method for cooking sauce and Meatballs. pop Varoma (filled with meatballs) and pop on the bowl
Cook Sauce at Varoma Temp speed 1.5 for 30-35 minutes until meatballs are cooked
If you wish you can even brown off the meatballs if you wish in a pan with a little olive oil. Not necessary but some people like that look.
I loved this recipe so healthy. I did however use fettuccine instead as my girls weren’t a fan of zoodles but will happily eat zucchini???

Hi Adele they are Raw 🙂 you can steam them in the Varoma to warm through if you like ?
