Fathead pizza – the no carb base pizza

Fat Head Pizza is a bit of a phenomenon around the foodie traps, not only for those that are trying to lose weight but those that want to cut traditional flour out of their diets. I have been having some issues with my gut lately for example if I eat too much flour type products I end up feeling bloated and having pain.  Basically due to being stressed out and crazy busy – I have been slacking off in the home made area for breads and other pastry foods.! Whilst I have chosen healthier options its still not my own cooking.
I thought I would give the Fat head pizza a whirl. There are many Fat head pizza recipes out there and this is my spin on it and the method is for the Cuisine Companion although I am sure if you just use kneading function on your TMX and a similar temp, less speed and time in your TMX you will achieve the same result ?



80g Almond flour
120 Grated Cheddar cheese
60g Cream Cheese
1 egg
Herbs & spices – onion powder , garlic powder , any combo of dried herbs, I personally like oregano to give it an Italian flavour.



Warm cheeses on speed 5 for 50 deg for 2 to 2 and half minutes
Add in almond flour, egg, spices and herbs and mix on Pastry P1 for 2 and half minutes
Scoop out onto baking paper and then its best placed in fridge for 10 minutes to firm up
Roll out between two sheets of baking paper, prick all over with a fork and bake in a 180/190  degree oven for 10-15 minutes until it starts getting golden in colour
Flip over using another lined tray by placing it on top and then carefully flip back and then top with pizza sauce and your favourite toppings.
I like either shredded chicken or sliced sausage , cacciatore etc , olives, sundried tomatoes or tomatoes, olives, mushrooms and some more grated cheddar cheese
Continue to bake at 180/190 degrees for 10 minutes or until golden.

*I’ve used Cheddar Cheese as a cheaper alternative but there are many of these pizza’s with mozzarella , most cheese’s will work

*I have done one large pizza but you can break into two parts and do two seperate ones
