No (refined) Sugar Cupcakes
Ingredients:
10 Medjool Dates – pitted
120gm butter
250gm SR Flour
2 eggs
2tsp baking powder
1tsp vanilla extract
200gm milk
2 large very ripe bananas chopped roughly
Method:
Preheat oven 175C
Place cupcake patties into trays, makes approx 34-38
Blitz Dates Speed 9 until a paste around 20 secs , scrape and then another 20 secs Should look like Photo 1
Add Butter Speed 7 until creamed together
Heat at 50 degrees for 1 to 1 and 1/2 minutes on speed 2
Add Flour baking powder and vanilla and mix for 10 secs on speed 4
Add Eggs and Milk and mix for 10 secs Speed 4
Add roughly chopped bananas and mix on speed 4 for 5-10 secs depending on how you like the consistency
Should look like photo 2
Scrape out mix into a large zip lock bag and cut corner Pipe into lined mini cupcake trays
Bake for around 15-20 mins until skewer comes out clean and top is lightly golden

These were delicious!! Such a hit with the kids. I let them put a small scraping of buttercream icing that I had on them and they loved them. They even ate the whole cupcake and not just lick the icing like they usually do. Next time I will make a cream cheese frosting for them as I think that would go perfectly. These will definitely be a go to recipe for me now as my kids love cupcakes and these are most definitely a healthy alternative to the usual sugar filled ones!! Thanks heaps for sharing!

These are so good! I made them this morning but didn’t have Medjool dates and because I really wanted to make them today I used about double the quantity of dried dates and soaked them in hot water for about 10 minutes to soften them up. I thought it might mess up the recipe but it worked out okay. (I’m sure they’d be even nicer with the Medjool dates). I got 24 mini sized cupcakes for the grandkids and 8 large muffin size out of the mix.

these tasted great and looked great when they came out of the oven, but once they started cooling, they sunk

Not sure why ? as you can see from the photo they definitely didn’t sink when I make them 🙂
Did you use SR flour ? and 2 tsp of Baking Powder ? was your flour and Baking Powder fresh ?
I’ve never had these sink
