  1. These were delicious!! Such a hit with the kids. I let them put a small scraping of buttercream icing that I had on them and they loved them. They even ate the whole cupcake and not just lick the icing like they usually do. Next time I will make a cream cheese frosting for them as I think that would go perfectly. These will definitely be a go to recipe for me now as my kids love cupcakes and these are most definitely a healthy alternative to the usual sugar filled ones!! Thanks heaps for sharing!

      1. I’ve enjoyed having a look through your new blog today! There are so many more recipes I want to try now!…You’ve done a great job! Keep up the good work! 🙂

  2. These are so good! I made them this morning but didn’t have Medjool dates and because I really wanted to make them today I used about double the quantity of dried dates and soaked them in hot water for about 10 minutes to soften them up. I thought it might mess up the recipe but it worked out okay. (I’m sure they’d be even nicer with the Medjool dates). I got 24 mini sized cupcakes for the grandkids and 8 large muffin size out of the mix.

    1. Not sure why ? as you can see from the photo they definitely didn’t sink when I make them 🙂
Did you use SR flour ? and 2 tsp of Baking Powder ? was your flour and Baking Powder fresh ?
      I’ve never had these sink
